Occupying a nondescript building in an unfashionable part of La Laguna is this small Canarian restaurant. Named after the traditional whistling language of neighbouring Canary Island, La Gomera, it really is a hidden gem, for the building and location hides what many are hailing as one of the best restaurants in the city.

The kitchen is manned by young chef, Braulio Simancas, a native of Tenerife. Born in 1979 into a family of chefs, he honed his culinary skills at the prestigious Instituto Virgen de La Candelaria.

After a stint at the Hotel Tecina on La Gomera and several other restaurants, he decided to set up his own business, with partner Pedro Noda.

So, in 2002, La Tasca Silbo Gomero was born. It had a modest beginning and one that was not exactly easy. The youthfulness of Braulio and Pedro plus the state of the building itself both had to develop over the years.

Fortunately, they did and the result is the excellent Restaurante Silbo Gomero in existance today.

With Braulio creating his superb dishes and Pedro manning front of house, you can be assured of a very rewarding dining experience.

Like so many young, adventurous Canarian chefs, Braulio specialises in traditional Canarian cuisine, but gives it his own unique twist.

Such is the quality of his dishes, he has won the Championship of Canarian Chefs in 2004 and, in the same year, the Dia del Canarias cooking championship.

He also took part in the Madrid culinary summit in 2008, on the subject of one of his specialities - the preparation of mojo sauces.

Such Canarian dishes on the menu include almogrote, fish with spiced gofio and avocado and maize with honey and ginger.

There is an extensive wine list, too, with many bottles occupying a huge wine rack all along one wall of the small room.

Here are directions to find the restaurant.

From the south, take the TF-1 motorway and change to the TF-2 motorway at junction 6A. Leave this at junction 2 and, at the roundabout, take the first exit. You will eventually have to turn right, so follow this road. After a while, you need to turn left. Watch out for a large warehouse on the right called "Unipapel" and make the turn there. Take the second left off this, by Bar Restaurante Conipa onto a one-way street, then take a right. The restaurant will be a hundred yards or so, on the left.

From the north, it's much more straighforward. You need to be on the TF-5 north motorway. If travelling from the La Laguna direction, exit at junction 6, then, at the roundabout, take the first exit. If travelling from the Santa Cruz direction, exit at junction 5D, take the fourth exit at the roundabout, then the first exit at the next one.

Stay on this road and, after crossing a main street, it'll become a one-way street. Carry on, then turn right. The restaurant is a little way along there, on the left.
