Although I don't know the restaurants in Golf del Sur, the supermarkets here in Tenerife sell a very good range of gluten free products. Restaurants in general seem to cater well for allergies, special diets etc. My friend, who is gluten free, was very impressed when she was over, saying it was even better than back in the UK.

Also, Sandra, you could check out this website: http://allergytranslation.com/cards/ , where you can get a credit-card-sized card in Spanish, saying that your mother-in-law is gluten-free, to show in restaurants. It costs 8 Canadian dollars, which works out at £3.96, if you're Northern Ireland, or €5.67 if you're in the South.

One of the leading chains of super markets in Spain: Mercadona offers a wide range of gluten free food, since its a family business and since one of its members has that condition, they´re very aware and sensible with the issue.
You can find a Mercadona on every corner. It´s much better than in the UK
